They are expressions of the human sapience for transforming terrestrial materials and products into edifying substances. They are both world-making expressions of a “maternal region” and, consequently, Canadian architecture can be understood through Canadian cuisine and Canadian cuisine through Canadian architecture. AB - L’architecture et la cuisine se révèlent par la matière. Elles évoluent et persistent en souvenirs, en goûts et dans le temps créant ainsi des fastes cosmospoïétiques capables de concevoir, grâce à la matière sensuelle de ce monde, des univers éloquents. Et l’essence même de l’architecture et de la cuisine force à réfléchir avec la matière plutôt qu’à la matière. Elles symbolisent la sapience grâce à laquelle l’homme transforme la matière et les produits matériels en substances exemplaires. Elles représentent, en elles-mêmes, les univers de leur région natale et conséquemment, on arrive à saisir l’architecture canadienne par le truchement de la cuisine canadienne, et inversement.
