In response to consumer trends, conventional synthetic food additives used to control the growth of foodborne bacterial pathogens are being replaced with natural alternatives. Bacteriophages (phages) are viruses of bacteria that have been successfully applied in the control of pathogenic bacteria in food. Cocktails of virulent phages have been designed for exogenous application to specifically target individual bacterial species that are of public health concern.
